Bistro de Paris Kuala Lumpur (Part 2) - "The Clossing of Bistro"

Me (Andre), Yus and Pait
15.December 2007, Bistro de Paris KL, two week into working at Bistro ... still blur on the ownership of the outlet .. hearing many thing different that make me worry of having making the wrong decision on joining the groups .. I should stay at Saisaki , never to leave the restaurant even been persuade ...
Well life have to go on with it ... fortunately i have few staff that was good enough to help and make the place go on .. is actually a dead bistro that it was about to close and this so call relatives was been given a chance to prove it can be work out and still can be save from closings..... but the so call relatives also have some other idea of the outlet ....
I was put there for being a spy or eye and ears fro them ... eventually I found out who were the actual owner of the property ... it was a husband and wife with other two directors, who call them self TrendMatrix Groups of Company .... The Bistro we under the company Jasa Kenari Sdn Bhd , owned by TrendMatrix Enterprise Sdn Bhd ... and was never owned by "The So Call Relatives "  They actually bullshit me .....
I was quite piss off and thinking of resign from the company and look for a batter one ... without this so call relatives knowing ...
After one week of searching it was the birthday of the husband of the relative .. and it was the first time i meet the owner and wife of the owner was quite happy to meet me and tested my food .. she was nice lady .. and strict also with the employee but charming.
The Lady owner was quite happy that i join them ... we even have a small meeting on how to improve the outlet ... but unfortunately the outlet is a goner .....
After 3months of me in the outlet ... i was ask to meet up with the bosses for a meeting ... the meeting was to ask me to terminate the Executives Chef of the bistro and to promote the Pastry and Dessert Chef to executive ... and to clear the outlet by one week ... means Bistro de Paris is officially close ...
in 30th May 2008....
It was so surprise that, the consultant that the husband and wife was so looking at been terminated with in 24 hours with out a notice just only a sms ...
At that time i was really stuck ... was wondering what are my luck now .. the so call relative was like saying i never feed them with news and they get piss off .. but unfortunately i never know what is going on cos the so call relatives never been honors to me ... until the last minutes that i was told ... the so call relative are not even having any share in the outlet ...  now is between me and the management to determine my luck in the company ... After Clearing and packing i was been re - offed as the Restaurant and Operation Manager of Sangria Island Bar & Restaurant Kuala Lumpur , with a new imag, of my self ....

My First Chinese New Year (CNY 2007) & “Chap Goh Mei” in K.Lumpur……………….

-->
On the 18th February 2007 (Sunday)……………. It was the 1st day of the Chinese Lunar Month, means the first day of the Chinese New year and also the year of the rat. On this vary occasion I was not too happy because it was my first Chinese New Year away from home, when I can see all my friends and house maid can go back celebrating the CNY at their home town and I was left alone at K.Lumpur, I felt very sad about it………… what can I do and to bring me together with my family on this special occasion………….
-->
During the night before Chinese New Year………… on the 17th February 2007, after work at the restaurant and on the way back, I drop by Sungai wang as there were mid night sales going on , just to fulfill the Chinese custom of buying a new pair of shirt, Jeans, shoes  and etc…..
I buy only one set of new wear because I know that, I don’t even have a time to wear it…………………On the way back home, I drop by a small restaurant to buy “YeeSang “or dish of prosperity in Chinese, for one person is only Rm10.00 so it’s quite fair the price, I also “Tapau” a mix vegetable and of course a quarter of roast chicken and the bill come up to Rm35.00. For a new year dinner is quite reasonable.

Note: Stephen Chow - God of cookery
When I reach home………… I put the food on the table and cook some rice, be for taking my shower …… after shower it was 11.30pm and I took my dinner, while watching T.V……. tonight was the movie by Stephen Chow the God of Cookery at NTV7………. After dinner I go to the veranda to witness the fireworks and the firecracker …….. it was quite amusing………..
On the first day itself…….. I went to work by monorail…….. the monorail was empty not like the usual busy day in K.Lumpur and the town was totally dead like ghost town…… well for my surprise the restaurant was on an heavy reservation and I was put in charge alone as all my superior and head of restaurant are all on leave and only be back by the 5th day of the CNY celebration…… well for me to encounter 500 – 1000 pax of customer per day  till the 4th day, it was not that easy at all but with the strong team of Myanmar boys it was just like a chicken feet to me and all of them….. I can say when it comes to “TEAM WORK” it really means “TEAM WORK”…… I can really put my head off to them………… no way our Malaysian People will perform like them….. and “TEAM WORK” really in their “Dictionary”………………
The difficulty and problem arise when I was been attack by all the VIP during the night operation and even make matter worse…………. When the “Royal Family” arrive without reservation…… as many of the main Japanese Restaurant are fully book and Chinese Restaurant are close for a couple of days during this festive occasion……… well it is hard to organize and accommodate all at once…….. Pity for the Royal Family as they have to wait for table at the VIP section………. But I felt very good to make some of the VVIP’s and VIP’s wait more than 45munites even they have reservation and they are late……… this is the only time I can “TELL THEM OFF” punctuality is important……… as many of us Malaysian will always delay time and never be punctual during any occasion………. Even some of the VVIP’s are trying to rise up their voice at me…… and my respond to them is “Datuk if you are late for a trip will the plane wait for you………. And because of your lateness all the passenger and schedule are delayed” is that fair Datuk?

So from now on I am in charge of usher………….. and I make them wait how nice……. My principle is that, when we have “Q” system but many of the VVIP’s and VIP’s will never follow, at this moment it reflects me when I was in Kuching, many years back. When me and Dad when to apply for our “New MyKad” at the NRD Kuching……………. A VIP Daughter came for the same purpose……… and she is much latter than us and even some people who are earlier than us, but the VIP Daughter got the privilege to be the first to be serve and never follow the “Q” system…….. Is this fair to the other who is there even earlier than us………. I and Dad don’t mind to wait because we have plenty of time to do so……..”Only the dead have no time or no more time to be spare for“ may be this particular groups of VVIP’s and VIP’s  family member are like the DEAD people have no more time to spare………………… Well “HOMOSAPIAN” are like that after they got the special privilege for them self they will just miss use of all the privilege, until vary inconvenience to the General Public…… this are the groups of people who are vary “KIASU” just like our fellow “HOMOSAPIAN”  from our neighboring  country……………….
Well back to my story…………. After getting all of them in and they want special service……. I told them only the “ROYALTY” will get the service, they even more unhappy, for me who cares who are you……… even the Royalty, I make them wait………..for me I rather serve the Royalty Family and they are not as fussy as the normal “TAN SRI & DATUK” outside………… even the Tengku ask me why I don’t serve the other VIP outside………. My answered to him is that they are not worth to be serve and the way they act just now is not welcome in our Malaysian lifestyle………… as for the Tengku he just smile………. For me I am to be able to bully them………
As for my surprise, how my boss and the head chef praise me for my job well done and how I handle the unwelcome VIP’s group and the Royal Family………………. I wonder how the hell he knew about it…… it was from the CCTV at the main entrance and I did not notice my boss came in by the back entrance….. he was monitoring me and all of us from the CCTV at his office.  After closing of the restaurant he invited me and my head chef to have supper at Jalan Alor….. well he go with his P.A and me with Chef Tambi….. after the supper Chef Tambi sent me back home……… at home is just like vary quiet and I on the player to listen to some song while doing my laundry and taking my shower……… be for ending my day……….

During the absent of all the in charge and head of restaurant……….. I have built up the respect from my boss, the chef and all the operation crew on me in very short time like in “One Week”………….for me I don’t expect they will be so respect on me and my way of handling situation at times…………. As when it comes to work it means work and no bull shit around…….. as time they will call me “TIGER ONG” hahahaha…… but I like the name and until some of my regular customer also refer me as “TIGER ONG” because at times when I am serious with work and dealing with problem they will never see me smile and most of the boys doesn’t dare to communicate with me and that is how the regular customer get to know my nickname………. Hahahahahahaha

Note: The chap goh mei festival.......
The 15th Day of Chinese New Year……………. Is the last day of the CNY and also the Lantern Festival, How times fly as now already the last day, at the restaurant it was just like normal and this day nobody off because is a Sunday………. And the management would not allow leave on Sunday……… so all the HOD (Head of Department) is around…………. Well work as normal……… after working and during the closing there was a quarrel between the kitchen Asst. Chef and The Floor Supervisor………… is a funny one because is only a small mater and everything got fire up because no one like the “SUPERVIOSR” anyway. Well for me I practice M.Y.O.B (Mind your own business) and go my clearing with the other staff and after clearing punch the card and say good bye to everyone and I go home. While on the way home I tapau some yeesang as this is the last day of CNY…………. Is a must for the last day hahahahahahahah….
At home now……. All my house mate is back and most of them are at home so I put the tapau at my room and make sure that no one “CURI MAKAN” ……….. hahahahahahaha…….. Happy CNY 2007 to all of you guys out there………..

My First Happy New Year 2007 with the team ....

Happy New Year 2007...............

On the 31st December 2006 (Sunday) @ 11.00pm………………….. I was unable to attend Church because my big boss wanted me and some of the senior staff to join him at Nihonkan Restaurant & night club in Jalan Ampang, K.Lumpur  for New year 2007 celebration…………………. There are eight of us including boss as Chef Tambi and Chef Billy Ong were unable to join in, so the seven of us  are as follow: Mr Tan Chuan Hong (Senior Captain of Saisaki), Mr Fang (Supervisor of Shogun) , En. Rashid (Captain of Shogun), Ms. Voon (Captain of Shogun), Ms Mandy Wong (Account Manager), Ms. Pei san (Account Exe.) and Me.
At  Nohonkan……………….. we were treat by the most expensive food and drinks from our boss because we have manage to hit our target be for the end of 2006……… as for Saisaki we are the best in a very short period of time we hit one mill. So my boss were very happy with the result……….. on this dinner I was very curious about something, Why he never invite the Asst. Manager and Supervisor of Saisaki……… So I ask Ms. Mandy and he heard about it, he told me the reasons of not inviting them here, because that they are not worth to be spent on this dinner and he ask me, why I so concern about not inviting them here and yet what have they done to you, you are still so concern about them………….. my only answered to my boss at that time is that, If not because of them I will never learn to be a better and equip staff of yours and I am not the person who will keep anger in myself on a person that have back stab me………. After hearing my reasons he was so please……………..
Note: (L) firework from KLCC@ Kuala Lumpur
Note: (R) Nihonkan Club & Restaurant @ Jalan Ampang, Kuala Lumpur.

During the dinner, he even arranges a stage show on Japanese and Korean cultural show………. How nice for me to experience this in a life time because I never been able to see this in my little home town back in Kuching. He even bought the most high quality sake (Japanese rice wine) and Chamisu (Korean rice wine) for this dinner…… it might cost him a fortune to treat us at this dinner…………

Note: Ang Pow (Year End Bonus)
After the dinner……… is time for the fireworks and we all wish boss happy New Year 2007 and all the present for the dinner……. After that we are about to go……… my boss gives every one of us an “ang pow” (Red Packet in Chinese) ………..  After receive it we all went back…… as Ms. Mandy and Ms. Voon sent me back………….. in the car Ms. Mandy say to me hei bro tomorrow belanja KFC ya……… I just say ok…. Then I thank her for sending me back…….
When I was at home……… I totally forget about the “and pow” because I was too damn tired and took a quick shower and go to bad…………. The next morning while I go through my bag be for going to work, then only I saw the “ang pow” just to open and see how much boss give to me, to my surprise it was Rm300.00 and I was so happy because my old phone Nokia 8250 are giving me problem and have to get a new one very soon………. So at the afternoon I went to Sungai wang during our lunch break, to look for a new phone……… all the new phone there are out of my budget and also the 2nd hand one. One of the “Tauke” was asking what my budget for a phone is.  I told him Rm 100.00…………. then he took out a Nokia 100I
……… I ask him how much he say to me is Rm110.00 and I told him if Rm 90.00 I take, Surprise the “tauke” agree to give me the price………….. I was so happy that I will not lost communication for a while with my parents if my old phone “Kong Out” after getting the new phone and buying a reload card, I went for a hair cut but don’t know where I can find one, so ask around every shop I go are” All Blood Sucker”, then I found one shop  call the Quick Cut……. Well, when I look at the price is very reasonable. For a hair cut is Rm10.00 so I give it a shot………….. the barber was not bad indeed. On the way back to the restaurant as Ms. Mandy were saying last night “Belanja KFC” so I bought a set of KFC for Rm9.90 to give it to her…… she was so happy that saying “No deed lah I was joking only mah” so I tell her joking or no joking when I say ok means ok………..Well today I spent Rm 130.00 and it worth it…………
Note: My new phone (Nokia - 1110i)

After work, while on the way back…….. Mr. Tan or Ah Tan ask me to wait for him and he say, he will sent me home and be for that lets grab a bite at Pudu so I said ok……… while at pudu he ask me how much I get and I ask him back, how much you get for the “ang pow” he say to me Rm100.00, but I never tell him the actual amount, If I tell him the actual sure many comment. So I ask him to guest how much can I get………. He says Rm200.00 because boss likes me a lot, I say to him does you think so, as I was a junior captain and you are senior captain, no way that I can get more than you. So I tell Rm100.00 also and he asks me why like that, I tell him our boss is very fair……………. After the “char kueh tiau” (Fried white rice noodle) he sent me back and never ask any more about the “ang pow”.
When at home, I took a quick shower and pray to the Lord for his kindness to provide me with many helps when times arrives……….. then I went to sleep……….
To summaries on this occasion, I was so thankful that the Good Lord who was looking after me and my welfare when I was facing a hard times in K.Lumpur…….I also do believe that when you do your work with sincerely and hard working, you will definitely be reward with kindness and your faith to words the Good Lord will be reward even bigger………….
